Make your own Italian dish

MINESTRONE

SERVES 4 PEOPLE

INGREDIENTS:

  • 198 gr yellow onions
  • 1 clove garlic
  • 4 tablespoons canoliva
  • 198 gr carrots
  • 198 gr celery
  • 567 gr diced potatoes
  • 198 gr green cabbage
  • 198 gr diced zucchini
  • 198 gr peas
  • 142 gr tomato can
  • 142 gr fresh Roma tomatoes
  • 1 gal vegetable stock
  • 71 gr fresh spinach
  • 1 teaspoon basil1 teaspoon mixed herbs (rosemary-thyme-sage)
  • 1 teaspoon parsley
  • 4 teaspoons salt
  • 1 pinch pepper

DIRECTIONS: 

Step 1
In pot heat up canoliva oil, add garlic and onions to sweat them (do not let them get color). Then add the carrots and the celery and cook 3-4 min. Add cabbage, zucchini, peas and cook another 3-4 min. Add canned tomatoes and fresh tomatoes and braise for 4 min. Add water, potatoes, salt, pepper and simmer for 15 min.

Step 2
Take 1 qt of soup out and blend it with immersion blender. Add it to the boiling soup. Add basil and spinach julienned, mixed herbs and parsley and simmer for 3 min.
